Hands-on Culinary Workshops in Collio
Choose your workshop
Traditional Jam-Making, Fresh Egg Pasta, and Heritage Cakes & Biscuits—fully hands-on at the estate. Small groups, calm pacing, and step-by-step guidance with all ingredients and tools provided. Book a single workshop or combine two for a complete morning or afternoon (90–120 minutes each).

Traditional Jam-Making
Select ripe seasonal fruit, set sugar ratios, and macerate with lemon. Simmer to the right set, learn the cold-plate test, then sterilise, fill, cap, and label your jars.
You’ll take home your own small-batch jam (typically 2 × 120 ml).
Typical duration: 90–120 minutes.

Fresh Egg Pasta, the classic way
Knead a silky 00-flour dough, rest it, then roll and cut by hand—tagliatelle, maltagliati, or simple filled shapes. Finish with a quick pan sauce and taste what you’ve made.
Typical duration: 90–120 minutes.

Heritage Cakes & Biscuits
Make crostata di marmellata (using your jam) and a regional bake such as pinza or gubana (season-dependent). Learn dough handling, fillings, shaping, and baking cues—then enjoy a warm slice at the end.
Typical duration: ~120 minutes.
